It isn't only the file system, it is Open Transport and the network subsystem that moves them files in and out of the machine as well. With the tests I did at Keylabs, it was impossible to sustain any high level of performance because of bugs in OT 1.1 that don't close the TCP sockets properly when runing on 100 megabit Ethernet. Supposedly, Apple is "aware of this problem." I don't know when they are offering a fix.
Granted, this is a situation that isn't seen often in the real world, unless you have a web server seeing lots of hits from a local network (vs over Internet connections). However, NT and NetWare web servers were able to handle it in our tests. It is a shame that the Mac couldn't.
